 3 Medium-sized cooked beets, thinly sliced or cut into chunks
 ½ Medium-sized red onion, thinly sliced
 ½ cup Mache
 1 tsp Sherry vinegar
 2 Large handfuls of fresh cilantro, torn
 1 Large handful of fresh mint, torn
 1 Fresh red chile, seeded and finely chopped
 12 tsp Sweet chile sauce
 1 pinch Sea salt
 1 pinch Black pepper
 1 Small avocado peeled & sliced

IN a large bowl, combine the beets, onion, mache and vinegar.

ADD the cilantro, mint, chopped fresh chile and sweet chile sauce (to take away the sharpness of the vinegar).

SEASON with a pinch each of salt and pepper and serve with slices of avocado.
